Extra Virgin Organic Olive Oil
Olive cultivation and extra virgin olive oil production is a long tradition of our family.
Being the third generation, we continue with love and respect the production of this precious commodity, by purchasing new olive trees and moving from conventional to organic production in 2005.
This effort is carried out at all levels of production and research.
In particular, in collaboration with the Department of Pharmacognosy of the University of Athens, significant quantities of the polyphenol <<Oleocanthal>> were researched and found, especially in the early stages of harvesting, a substance particularly beneficial for human health.

Production & processing
Our actions aim to improve the quality of the olive oil and this is achieved as follows:- Enhancing the olive grove by composting olive by-products (branches, leaves) and not with chemical fertilizers.
- Ban on the use of hazardous chemicals.
- Early olive picking (green olive oil).
- Same day oiling in the olive mill.
- Cold pressing (temperature up to 28 C). Storage in stainless tanks, under nitrogen pressure.
